Pumpkin Cherry Bread

Yield Makes one loaf

Pre-heat oven to 350

Butter one loaf pan


1 cup solid pack pumpkin
I cup granulated sugar
1/4 cup water
2 eggs
1/4 cup vegetable oil
2 cups flour
2 tsp. baking powder
1/4 tsp salt
1 1/2 tsp pumpkin pie spice
1/2 cup dried cherries or cranberries

In a mixer beat together pumpkin, sugar, water, eggs and oil.

Sift together the flour, baking powder, salt, baking powder and spices

Add the dry ingredients to the wet and blend just until smooth. Fold in the dried cherries (or cranberries). Spoon into prepared loaf pan. Top with Milk and Honey Pumpkin Spice Mix and bake about 40 to 45 minutes until a toothpick inserted in the middle comes out clean.

* you can add additional granola to the bread when you fold in the cherries if you would like a crunchier texture.
